SCOTCH EGGS 
4 hard boiled eggs
2 lbs. bulk sausage
Bread crumbs
1 raw beaten egg

Boil eggs hard; shell eggs. Make sausage balls about the size of golf balls or larger. Coat each egg with sausage meat; roll in bread crumbs and beaten eggs, then deep fry until golden brown, cut eggs in half. Serve with salad.
