TOMATO & CUCUMBERS 
3 or 4 sm. cucumbers, peeled & thinly sliced
2 pt. boxes cherry tomatoes, cut in half
1 bunch fresh green onions with green stems
1/2 c. finely chopped parsley

DRESSING:

1 tbsp. sugar
1/4 c. vegetable oil
2 tbsp. olive oil
2 tbsp. tarragon vinegar

Sprinkle cucumbers with salt, put in a strainer over bowl. Let stand 30 minutes. Combine all ingredients for the dressing in blender. In salad bowl make alternate layers of tomatoes, cucumbers, parsley and onions. Pour dressing over salad, a small amount after each layer. Season with salt and pepper. Cover with plastic wrap and refrigerate for a 1/2 hour. Serves 6.
