1/2 c. safflower mayonnaise
1/2 tsp. finely chopped white onion
1 lg. ripe tomatoes
1 med. cucumber, peeled & diced
Lettuce greens
Ground black pepper

Combine mayonnaise and onion; toss with tomato and cucumber. Serve over lettuce. Sprinkle with freshly ground pepper.
