BEST EVER CARROT CAKE | |
1 1/2 c. salad oil 4 eggs 1 tsp. vanilla 2 c. sugar 2 c. grated carrots 1 c. crushed pineapple with juice 1 c. coconut 1 c. chopped nuts 2 1/2 c. flour 1 tsp. baking powder 2 tsp. cinnamon 1 tsp. baking soda 1/2 tsp. salt Mix oil, eggs, vanilla and sugar until foamy. Stir in carrots, coconut, pineapple, and nuts and dry ingredients. Grease 9 x 13 inch pan and dust with flour. Pour in cake mixture. Bake at 350 degrees for 1 hour. Cool and frost with following frosting. FROSTING: 1 tsp. vanilla 1/2 cube butter 3 oz. cream cheese 1/2 box powdered sugar Blend all ingredients and spread on cake. |
