FRENCH BREAD 
1 1/2 qt. & 1/4 c. warm water
3 tbsp. yeast
6 tbsp. sugar
1 1/2 tbsp. salt

Mix in mixing bowl, until yeast is dissolved about 5 minutes. Add 1/4 cup melted shortening or oil, stir in about 2 1/2 pounds flour and let it rise for 10 minutes. Add 2 1/2 pounds more and knead well. Put in plastic bowl and place on heating pad with temperature on low. Let rise for 30 minutes. Punch down and divide dough into 5 portions. Roll out as pie crust. Roll up like a jelly roll. Place sealed side down on greased pan.

Let rise in warm place until it has increased in volume, 2 1/2 times. Brush top with egg wash. Use 1 egg beaten up into 1/2 cup water. Cut diagonal slits across each loaf every 2 1/2 inches. Bake at 400 degrees for 30-35 minutes.
