PORK CHOPS 
Pork chops 1 inch thick
Salt
Pepper
Allspice
Thyme
Dr y white wine or chicken broth

Film a deep frying pan with good cooking oil. Place chops in pan. Season with salt, pepper and sprinkle with allspice and thyme. Keep heat moderate and brown chops lightly on each side for 5 minutes. Pour 1/4 inch wine or chicken broth over chops, cover the pan and simmer for 5 minutes on each side. Remove chops to a hot platter. Rapidly boil down the juice until almost syrupy and pour over the chops.
