CHEESY BAKED HOMINY 
2 tbsp. onion, chopped
1 tbsp. bacon grease
2 eggs, beaten
1 c. Half and Half
1/2 tsp. salt
1/8 tsp. pepper
2 (14 1/2 oz.) cans of hominy, drained
1/2 lb. bacon, sliced
1 c. Cheddar cheese, grated

Fry bacon in skillet until very crisp. Drain on paper towel and set aside. Pour all but 1 tablespoon bacon grease out of skillet. Saute onion in grease until transparent. In bowl, combine eggs, half and half, salt and pepper. Beat well. Stir in onions, hominy and half of cheese. Crumble bacon into mixture and fold in. Pour into 10 x 6 x 2 inch baking dish and sprinkle with other half of cheese. Bake at 350 degrees for 25 to 30 minutes or until set. Let stand 5 minutes before serving.
