BUTTERED PEAS 
2 c. water
1/2 tsp. salt
1 1/3 c. frozen peas (about 6 oz.)
1 to 2 tbsp. clarified butter
1/4 tsp. basil
Salt and pepper to taste

Combine water and salt in a medium saucepan. Bring to a full boil. Cover and cook 2 to 5 minutes. Cover and keep warm over very low heat up to 5 minutes.
