ONION & BEER SOUP 
1 lb. (about 4 lg.) onions, sliced thin
1 bay leaf
2 tbsp. unsalted butter
12 oz. beer
2 c. chicken broth
1/2 tsp. Angostura Bitters
Coarse grated mild cheddar cheese

Cook onions and bay leaf in butter until golden (20 minutes). Add beer, stir, heat 5 minutes. Add broth and bitters, simmer 2 minutes. Discard bay leaf. Serve in crocks, sprinkle with cheese to taste.
