GLAZY SAUCED CHICKEN | |
1 fryer chicken (chicken parts may be used) 2 tbsp. cooking oil 1 clove garlic, minced SAUCE: 1/4 c. soy sauce 1/4 c. mirin (sweet cooking rice wine) 1/4 c. water Some cornstarch and water for thickening 1 green onion Cut chicken up into pieces about the size of thighs. Brown chicken in oil on high heat, adding the garlic (5 minutes). Drain off excess fat. Add sauce, cover and simmer for 20 minutes. Turn chicken pieces over once while simmering. Thicken with cornstarch and water if needed or allow sauce to cook down, forming a glaze. Toss chopped green onions on top of chicken. |
