SWEET POTATO SOUFFLE 
3 c. cooked yams, mashed
1 c. white sugar
1/4 c. melted butter
1/2 tsp. salt
2 eggs
1/2 c. white milk
1 tsp. vanilla flavoring

Mix all ingredients together. Pour into buttered baking dish. Dish needs to be 2 to 3 inches deep. Sprinkle with topping of:

1/2 stick butter
1 c. brown sugar
1/2 c. self-rising flour
1 c. chopped nuts

Melt butter and stir in brown sugar. Add flour and mix in nuts. Mix thoroughly until mixture is crumbly. If mixture is too thick add a little butter. Bake at 350 degrees for 30 minutes.
