PUMPKIN CHEESECAKE 
PASTRY:

1/3 c. butter
1/3 c. sugar
1 egg
1 1/4 c. flour

CAKE:

3/4 c. sugar
2 (8 oz.) pkgs. cream cheese
1 tbsp. ginger
1 (16 oz.) can pumpkin
1/4 tsp. nutmeg
2 eggs
Pinch salt

Cream butter and sugar until light and fluffy. Blend in egg, add flour and mix well. Press dough on bottom and sides of 9" springform pan. Bake 5 minutes.

Combine cream cheese and sugar; mix at medium speed until blended. Add pumpkin, spices, salt and eggs one at a time. Pour mixture into crust. Bake at 350 degrees for 50 minutes.
