OYSTER FRITTERS 
1 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. pepper
2 eggs
1 c. milk
1 qt. drained standard size oysters

Combine flour, baking powder, salt and pepper. Mix beaten eggs and milk together and add to flour mixture. Mix well. Gently stir in oysters. Cover bottom of 10 to 12 inch skillet or electric fry pan with a thin layer of oil. Heat at 350 degrees. Put batter into oil by tablespoons, making sure to include 3 to 4 oysters in each fritter. Fry until golden brown on both sides. Replenish oil if necessary.
