BROCCOLI (OR CAULIFLOWER) SOUP 
1 med. onion, chopped
2 stalks celery, chopped

Place onion and celery into medium saucepan. Cover with water. Add a dash of salt. Boil until onions are soft. Add 1 package of frozen broccoli (or cauliflower) to water. Let stand for 1 minute. Pour into blender. Puree. Pour mixture back into pan. Add 2 tablespoons of flour. Stir.

Then, add 3 tablespoons of butter and enough milk for desired consistency. Heat, but do not boil. Add 3 slices of shredded cheese and melt. Stir often to prevent sticking.
