HOT COLE SLAW 
3 c. finely shredded cabbage
1/4 c. chopped chives
3/4 c. freshly made dressing (below)

Combine all ingredients in glass bowl. If slaw is not sufficiently hot, heat in double boiler. Toss lightly and serve.

COOKED SALAD DRESSING:

1/2 c. wine vinegar
1/2 tsp. prepared mustard
3 egg yolks
1/8 tsp. salt
1/4 tsp. cayenne pepper or 1/8 tsp. cayenne and 1/8 tsp. paprika

Heat vinegar to boiling. In double boiler, beat egg yolks and seasoning until thick, then pour hot vinegar slowly over yolks stirring constantly. Cook over hot water stirring constantly until thick - chill. Yield: 6 servings - each serving 72 calories.
