HONEY CINNAMON DROP COOKIES 
1 c. brown sugar
1 c. honey
1 c. butter
1 c. buttermilk
3 eggs
3 1/2 c. all-purpose flour
1 1/4 tsp. baking soda
1 1/4 tsp. baking powder
2 1/2 tsp. cinnamon
1/4 tsp. salt
2 tsp. vanilla

In large mixing bowl combine honey, brown sugar and butter; beat with electric mixer until all is blended. Add eggs and beat again. Add vanilla, 1/2 cup buttermilk and flour mixed with cinnamon, baking powder, baking soda and salt. Mix well with electric mixer. Add remaining buttermilk and beat by hand. You may have to add 1 1/2 tablespoons buttermilk if dough is too stiff.

Chill dough overnight for best results. Drop by teaspoonful for a smaller cookie or by tablespoonful for larger cookie on a greased cookie sheet and bake in 375 degree oven for 15 minutes or until golden brown. Makes 3 1/2 dozen. Note: This cookie recipe can be made with raisins, nuts or chopped dates.
