GREEN CHILI 
1 pork butt, 4-5 lbs or 6 lg. pork chops
8 green chilies, remove seeds, skinned & diced, can use canned
2 jalapenos, skinned
1 lg. tomato, skinned & diced
2 cloves garlic
1/2 tsp. cumin
6 1/4 c. water
Salt & pepper to taste

Boil or pressure cook pork butt until it falls apart in 6 cups of water or to cover. Separate pork from water, saving water, debone pork, cut into bite size pieces.

Cool water until able to skim fat. Put meat back in water and add green chilies, tomatoes, jalapenos, garlic, cumin, salt and pepper. Simmer for 20 minutes. Mix 1/4 cup flour and 1/4 cup water, stir into chili mixture until it thickens (do not make it a gravy).
