MOM'S CHINESE CHOP SUEY 
1/4 c. butter or shortening
2 c. cooked chicken
1 c. onion, cut fine
1 tsp. salt
1 tsp. pepper
2 c. celery, cut fine
3/4 c. hot water
1 can bean sprouts, drained
1 can mixed Chinese vegetables, drained

Melt butter, add onion, celery, and hot water. Cook 5 minutes. Add chicken, bean sprouts, and vegetables. Mix thoroughly. Add thickening. Stir lightly and cook 5 minutes. Serve with Chinese noodles or rice.

THICKENING:

1/3 c. cold water
2 tbsp. cornstarch
1 tbsp. soy sauce
1 tsp. sugar

Mix.
