BACKHAHNCHEN NACH SUDDENTSCHEN ANT | |
3 lb. chicken Salt 2 eggs, whipped 1 c. dry bread crumbs 1/2 c. grated Parmesan cheese 1/4 tsp. powdered ginger 2 oz. butter 3 tbsp. olive oil 6 lemon wedges 1. Preheat oven to 400 degrees. 2. Cut the chicken into serving sized pieces, rub them with salt, dip them in the egg and roll them in a mixture of bread crumbs, cheese and ginger. 3. Heat the oil and butter in a frying pan and brown the chicken on all sides. 4. Transfer the chicken to a roasting tray and bake for 20-30 minutes in the oven. 5. Serve the chicken pieces arranged on a platter, garnished with the lemon wedges. Serves 8. |
