BUTTERMILK CAKE 
1 c. butter
2 c. sugar
3 c. flour
1 c. buttermilk
1 tsp. salt
4 eggs
1/2 tsp. baking powder
1 tsp. vanilla
1 tsp. lemon extract

Cream butter until light and fluffy. Slowly add sugar. Sift all dry ingredients together. Gradually add dry mixture to butter mixture, alternating with buttermilk. Stir in vanilla and lemon extract. Pour into a tube pan and bake at 350 degrees for 45 minutes or until cake tests done. Remove from oven and glaze with lemon glaze (see recipe below) while cake is hot.

LEMON GLAZE:

1/2 c. sugar
3 tbsp. lemon juice

In a small saucepan, combine sugar and lemon juice. Heat until sugar is almost dissolved. Drizzle mixture over hot cake.
