OATMEAL SCOTCHIES 
1 c. (2 sticks) butter, softened
3/4 c. granulated sugar
3/4 c. brown sugar, firmly packed
2 eggs
1 tsp. vanilla or 2 tsp. grated orange peel (about 1 orange)
1 1/4 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt (optional)
1/2 tsp. cinnamon
3 c. Quaker Oats (Quick or Old-Fashioned) uncooked
1 (12 oz.) pkg. (2 c.) Nestle Toll House butterscotch flavored morsels

Heat oven to 375 degrees. Beat butter, sugars, eggs and vanilla until creamy. Gradually add combined flour, baking soda, salt and cinnamon; mix well. Stir in remaining ingredients. Drop by level measuring tablespoonfuls onto ungreased cookie sheet. Bake 7 to 8 minutes for a chewy cookie, 9 to 10 minutes for a crisp cookie. Cool 2 minutes on cookie sheet; remove to wire rack. Cool completely. Store in tightly covered container. Makes approximately 4 dozen cookies....Enjoy!
