WATERMELON RIND PICKLES | |
Trim green and pink from watermelon rind and cut in desired sized pieces. Cover with brine made by using 3 tablespoons salt to 1 quart water, and allow to stand overnight. Drain and cook rind in clear water until tender. Then follow directions for making peach pickles. |
