WATERMELON RIND PICKLES 
Rind of 1 watermelon
2 tbsp. slaked lime
4 1/2 c. sugar
2 c. cider vinegar
1 tbsp. whole cloves
9 sm. sticks cinnamon

Remove red and green from rind, cut into 1 inch cubes (approximately 12 cups).

In large bowl dissolve lime in 1 cup water. Add rind and toss well. Cover with water. Refrigerate for 24 hours. Drain lime water and rinse thoroughly in running water. Put rind in kettle with remaining ingredients. Simmer rind until translucent (about 3 hours). Add to jars, leave 1 inch headspace. Seal. Makes approximately 5 pints.
