CUPCAKES WITH LEMON FILLING | |
1 box yellow Duncan Hines (moist deluxe) cake mix 1 box vanilla instant pudding 4 eggs 1/2 c. Wesson vegetable oil 3/4 c. cold water Mix together oil and cold water. Add 2 eggs and half of oil mixture. Then add remaining ingredients and beat for at least 4 minutes, until no oil is visible in the batter. Pour into baking cups and bake at 350°F for 18 to 20 minutes. When cool, hollow out and spoon lemon pudding into centers. Top with the cut-off piece and sprinkle with powdered sugar. |
