LEMON CHEESE FILLING 
6 large egg yolks, well beaten
2 c. granulated sugar
Juice and grated rind of 2 lemons
Butter size of an egg
2 tbsp. confectioners sugar

Combine yolks, granulated sugar, lemon juice, rind and butter. Cook in double boiler until mixture thickens. Beat well. Add confectioners sugar if desired.
