LEMON FILLING 
1 c. sugar
2 1/2 tbsp. flour
1/8 tsp. salt
4 tbsp. lemon juice
grated rind of 1 lemon
2 eggs, beaten
1 tbsp. butter

Mix sugar, flour, salt, lemon juice and rind. Cook over low heat or boiling water, stirring, until thickened. Cook 10 minutes more; stir often. Stir hot mixture slowly into eggs. Return to pan. Add fat; cook 2 minutes, stirring. Cool.
