POTATOES AND CHEESE SAUCE 
Cook 5-6 pounds potatoes, peel and dice into 1/2 inch cubes. Put in casserole 2 cups canned small onions or 2 pounds little white onions. Make sauce by blending 1/2 cup melted butter, 1/2 cup flour; add 3 cups milk, 3 cups cream, 1 cup chicken broth or bouillon cube in water. When smooth add 1 pound sharp cheddar cheese, 1 cup grated Parmesan cheese, 1/2 teaspoon pepper, 1 3/4 teaspoons salt, 1 teaspoon seasoned salt, 1 clove minced garlic. Put sauce and onions in potatoes. Bake at 350 degrees for 45 minutes. Put in 2 casseroles. It will be thin, but will thicken.
