CARROT CAKE 
1 1/2 c. Mazola oil
2 c. sugar
4 eggs - one at a time
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
2 tsp. baking powder
2 c. flour

Mix dry ingredients - add eggs, oil nuts, then 3 cups grated carrots. (I put mine in blender), 3/4 cup nuts - I use black walnuts. Bake at 350 degrees for 30-45 minutes until toothpick comes out clean.

ICING:

8 oz. Philadelphia cream cheese
1 lb. powdered sugar
1/2 stick butter
2 tsp. vanilla

Mix.
