1 1/2 c. flour 1/2 c. nonfat dry milk powder 1/2 tsp. salt 1/2 tsp. baking soda 1 1/2 tsp. cinnamon 1/2 tsp. ginger 1/2 lb. butter 1/2 c. granulated sugar 1/2 c. brown sugar 3 eggs 1 c. raisins 1 c. chopped apricots 1 c. chopped prunes 1 c. grated carrot 2 c. quick cooking oats Sift together flour, dry milk powder, salt, baking soda, cinnamon, ginger. Set aside. Cream butter, add sugars and beat well. Add eggs, one at a time, and beat until smooth after each addition. Add raisins, apricots, prunes, carrot. Add dry ingredients gradually. Add oats gradually. Mix until oats are stirred. Place dough by heaping tablespoonfuls onto greased cookie sheet. Bake in 400 degree oven 12 to 14 minutes in upper third of oven. Makes 4 dozen cookies. |
