JELLY MUFFINS 
1 1/2 c. unsifted flour
3 tbsp. sugar
1/2 tsp. baking soda
1/2 tsp. salt
1 c. buttermilk
3 tbsp. butter, melted
Jelly

In a medium bowl, thoroughly mix flour, sugar, baking soda and salt. Add buttermilk and melted butter. Stir just until dry ingredients are moistened. Fill greased or paper lined medium sized muffin cups 1/3 full. Place 1 tbsp. jelly in the center of each. Then fill cups about 2/3 full with remaining batter. Bake at 350 to 375 degrees for 25 minutes. Remove immediately from muffin cups. Serve warm. Makes 10 to 12.
