DINNER ROLLS | |
4 to 4 1/2 c. flour, divided 1 pkg. active dry yeast 1 c. milk 1/3 c. sugar 1/3 c. butter, butter or shortening 1 tsp. salt 2 eggs 2 tbsp. vegetable oil In large mixing bowl, combine 2 cups flour and yeast. In microwave, heat milk, sugar, butter and salt, just until warm. Add to the flour mixture. Add eggs. Beat at low speed with electric mixer for 30 seconds, then beat at high speed for 3 minutes. Stir in the remaining dough with a spoon. Knead until dough is smooth and elastic, adding more flour if dough is sticky. Shape dough into a ball. Pour vegetable oil over the ball of dough. Cover with a tea towel. Let rise in warm place for 1 hour. Punch dough down to remove air bubbles. Cover and let rest for 10 minutes. Grease a 9 x 13 inch pan. Shape into 24 balls and put in prepared pan. Cover and let rise for 30 minutes. Meanwhile, preheat oven to 375 degrees. Bake until done, about 12 to 15 minutes. Makes 2 dozen rolls. |
