CARBONNADE FLAMANDE 
1 1/2 lb. cubed beef
3 lg. diced onions
2 tbsp. butter
1 tbsp. flour
1/4 tbsp. thyme
1 bay leaf
1 tbsp. salt
Pepper
1 bottle beer or water
1 tbsp. vinegar
1 tbsp. sugar
2 tbsp. mustard

Brown meat quickly in melted butter. Salt, pepper meat and remove from pot. Brown onions; add flour and stir well. Add browned meat, herbs and enough beer or water to cover meat. Simmer about 2 hours or until meat is tender. Add a small amount of vinegar, mustard and sugar to taste. Serve with boiled potatoes or noodles.
