PEACH & POPPY SEED MUFFINS | |
3/4 c. pureed peaches (Jr. baby food) 1 tsp. baking soda 10 tbsp. butter 1 c. sugar 2 eggs 1 1/4 c. flour 1/4 tsp. salt 1/2 tsp. vanilla 3 tbsp. poppy seeds Stir soda into peaches and set aside. Cream butter and sugar until smooth. Add eggs, one at a time. Add vanilla. Combine flour and salt. Alternately add flour and peach mixture. Then add poppy seeds. Fill 12 muffin cups nearly to top. Bake at 350 degrees for 20 to 25 minutes. |
