MEAT AND CHEESE PIE | |
9 inch unbaked pie shell 1/2 lb. ground chuck (hamburger may be used, well drained of grease) 1/2 c. finely chopped onion 1 egg, slightly beaten 1 c. sweet cream or 3/4 c. sour cream 3/4 tsp. salt 1/4 tsp. pepper Pinch of oregano 1 sm. can tomato paste 1/4 c. chopped sweet pepper 1/4 c. finely chopped celery ( use whole celery seed, 1/2 tsp. if I'm out of fresh celery) 8 oz. cheddar or Swiss cheese, cubed Parmesan cheese, grated Heat oven to 425 degrees and bake crust for about 5 minutes. Cover bottom of crust with Parmesan cheese. Set aside. Cook meat in two heaping spoons of butter until all the red is gone. Remove the meat from the drippings add the chopped onion, pepper and celery; cook until tender. Add slightly beaten egg to cream, stir in the cooked vegetables, then the tomato paste. This makes a thick sauce. Place the cubed cheese in crust, then add the meat, and lastly the sauce. Cook in 375 degree oven about 25 minutes or until set. Serve warm. (May be frozen and reheated, 350 degrees.) |
