GUACAMOLE DIP 
1 c. cottage cheese
1 tsp. lemon juice
3/4 tsp. salt
1 lg. ripe avocado
2 tsp. grated onion
1 clove garlic, crushed
1/8 tsp. pepper
1 med. ripe tomato

In a small mixing bowl, beat together cottage cheese, onion, lemon juice, garlic, salt and pepper at highest speed of mixer until fairly smooth.

Meanwhile, peel and remove pit from avocado; sieve or mash with a fork. Remove skin from tomato; mince. Fold avocado and tomato into cottage cheese mixture. Cover and chill. Serve with crackers, corn and potato chips.

NOTE: Serve the same day as made.
