BAKED CHICKEN REUBEN 
4 whole chicken breasts, halved & boned
1/4 tsp. salt
1/4 tsp. pepper
1 (32 oz.) can sauerkraut, drained
4 slices natural Swiss cheese
1 1/8 c. reduced calorie Thousand Island dressing
1 tbsp. parsley, chopped

Place chicken in greased baking pan and sprinkle with salt and pepper. Place sauerkraut over chicken; top with Swiss cheese slices. Pour dressing over cheese. Cover with tin foil and bake at 325 degrees for about 1 1/2 hours. Sprinkle with parsley. Makes at least 4 servings.
