BANANA ICE CREAM 
6 eggs, separated
3 c. sugar
1 can evaporated milk
5 or 6 ripe medium bananas, mashed
1 tbsp. vanilla
1/2 gallon milk

Beat egg whites until form soft peaks. Add 2 cups sugar and beat again until sugar is dissolved. Set aside. Beat egg yolks until pale yellow in color. Add 1 cup sugar. Beat until sugar is dissolved. Mix both egg mixtures together in large bowl. Beat until well blended. Add evaporated milk, mashed bananas and vanilla. Mix well. Add milk to make a gallon. Mix well. Put in ice cream freezer and freeze. Makes one gallon.
