TWO BEAN AND RICE SALAD 
Garlic Dressing:

1/3 cup white wine vinegar
1/4 cup Olive oil or salad oil
2 tbsp. water
3/4 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. pepper

In a screw-top jar combine all ingredients, cover and shake well to mix.

Salad:

1/4 cup snipped cilantro
1 recipe garlic dressing or 1 (8 oz.) jar Italian salad dressing

In a 1 1/2 qt. covered container combine cooked rice, pinto beans, black beans, peas, celery, onion, diced green chili peppers, and the 1/2 cup cilantro. Add the dressing to the rice mixture; toss gently to mix. Cover and chill up to 24 hours. To serve, transfer the chilled salad to a serving bowl. If desired, garnish with cilantro sprigs, and whole chili peppers.

Makes 16 servings.
