UPSIDE - DOWN PANCAKE | |
3/4 lb. Canadian bacon slices 1 c. maple-flavored syrup 2 eggs 1 1/2 c. milk 1 1/2 c. all-purpose flour 1/4 c. butter, melted 1 tbsp. + 1 1/2 tsp. baking powder 1 tbsp. sugar 1/2 tsp. salt 1 jar (15 oz.) chunky applesauce Arrange bacon slices, overlapping slightly, in ungreased 13 x 9 x 2 inch baking dish. Pour syrup over bacon. Beat eggs in 1 quart bowl with hand beater until foamy; beat in remaining ingredients, except applesauce, just until smooth. Pour over bacon and syrup. Bake, uncovered, in 400 degree oven until golden brown and firm, 20 to 25 minutes. Heat applesauce just until warm. Cut pancake into 8 pieces; invert on serving plates. Serve with applesauce topping in center of individual slices. |
