DUCK FAT SUGAR COOKIES | |
2/3 c. chilled rendered duck fat (left over from a roast duck) 1/3 c. (5 1/3 tbsp.) butter, soft 1 1/2 c. sugar 2 lg. eggs 2 tbsp. milk 1 tbsp. vanilla 4 c. flour 1 tbsp. baking powder 1/2 tsp. salt 1/2 c. raisins (opt.), or chopped dates Mix flour, baking powder, salt and raisins or dates together and set aside. Mix all remaining ingredients together then blend both mixtures together. Roll rounded teaspoons into balls. Place balls 3" apart on ungreased cookie sheets. Flatten with glass dipped in sugar (the edges will crack slightly). Bake at 350 degrees for 10 to 12 minutes until they are pale golden. Transfer to racks to cool. Makes 100 cookies. |
