SWEET POTATO LOAF 
1 1/2 c. sugar
1/2 c. regular oil
2 eggs
1/3 c. water
1 3/4 c. flour
1 tsp. nutmeg
1 1/2 tsp. cinnamon
1/2 tsp. salt
1 tsp. baking soda
1 c. cooked mashed sweet potatoes
1/2 c. chopped walnuts
1/2 c. raisins
2 (1 lb.) coffee cans

Mix sugar, oil, eggs and water at medium speed of mixer until just combined. Mix next 5 ingredients and add to egg mixture. Stir in nuts, raisins and sweet potatoes. Spoon later into 2 greased and floured 1 pound coffee cans. Bake at 350 degrees for 1 hour. Let cool in cans for 10 minutes. Remove from cans to complete cooling.
