1 1/2 lbs. hamburger
1/2 c. beef broth
1/3 c. catsup
2 eggs
1 c. Italian seasoned bread crumbs
1 tbsp. instant minced onion
3 tbsp. parsley, chopped
1 1/2 tsp. salt
2 c. hot mashed potatoes
1/3 c. Parmesan cheese

Combine first 9 ingredients in large bowl; mix well. Press mixture into 9 x 5 x 3 inch loaf pan. Bake at 350 degrees for 1 hour. Remove from oven, pour off drippings. Unmold loaf onto cookie sheet. Combine mashed potatoes with cheese, frost meat loaf with mixture. Brush with melted butter. Bake at 400 degrees for 20 minutes.
