APPLE SPICED CHICKEN | |
1 (2 1/2 - 3 lb.) broiler fryer chicken, quartered Cooking oil 1/4 c. apple jelly 1 tbsp. lemon juice 1/2 tsp. ground allspice Break joints of chicken. Brush chicken with oil, season with salt and pepper. Place in broiler pan, skin side down. Broil 5" to 6" from heat about 20 minutes or until lightly browned. Turn, broil 15 to 20 minutes or until browned. TIP: Broil chicken far enough from heat so it browns evenly and cooks to desired doneness. Place chicken on rack in a broiler pan. Place under broiler unit with surface of chicken 5" to 6" from heat. Meanwhile, for glaze melt jelly; stir in lemon juice and allspice. Brush over chicken, broil 1 to 2 minutes. Remove to platter. Apply rest of glaze. |
