SALMON (OR TUNA) LOAF | |
2 eggs 1/4 tsp. pepper 1/2 tsp. salt 1/4 tsp. thyme 1 tsp. lemon juice 1 tbsp. chopped parsley, fresh, frozen or dried 3/4 c. milk 12 soda biscuits, crumbled 16 oz. canned salmon or tuna or other cooked fish 1 tsp. minced onion Place soda biscuits in a Ziploc bag and roll with rolling pin. Stir biscuit crumbs into milk. Beat eggs and add seasonings. Stir into biscuits, soaked in milk. Add flaked salmon. Place in greased loaf tin. Bake 3/4 to 1 hour in 350 degree oven. Serve hot or cold. Serves 4 to 6 persons. |
