DELICIOUS PICKLE RINGS 
6 lb. lg. cucumbers, peeled, seeded and sliced in square pieces
1 qt. vinegar
1 gal. water
1 c. lime, in gal. water
5 or 6 pieces cracker ginger
1 1/2 oz. pickling spices
3 tbsp. alum
1 c. salt
5 lb. sugar
2 sticks cinnamon

Cut cucumbers 1/2 inch thick or square. Soak in lime water overnight. Pour off next morning and rinse. Soak in salt water 6 hours. Pour off and rinse in cold water. Soak 1 hour in clear cold water.

Fill pot with hot water, bring to boil with alum; add cucumbers, bring to boil, reduce heat and simmer 15 minutes. Pour off water. Drain cucumbers on towel.

Combine vinegar, sugar and spices; let boil. Add cucumbers, bring to boil and simmer 15 minutes. Pack in jars and seal.
