SWEET POTATO CAKE 
1 1/2 c. sugar
1 c. vegetable oil
1 1/2 c. cooked mashed potatoes
4 lg. eggs
2 tsp. vanilla extract
3 c. sifted all purpose flour
2 tsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1/4 tsp. nutmeg
1/2 c. dark seedless raisins
1/2 c. chopped walnuts
Confectioners sugar

Heat oven to 350 degrees. Grease and flour a 10 inch bundt pan. Beat together sugar, oil, and sweet potatoes until fluffy. One at a time beat in eggs, adding vanilla with last egg. In a sifter, combine flour, baking powder, soda, salt, cinnamon, and nutmeg. Sift onto sweet potato mixture and beat on low speed, scraping side of bowl often, just until combined. Fold in raisins and nuts. Turn batter into prepared pan, bake 1 1/2 hour. Or until top springs back when pressed with fingertip. Cook cake 5 minutes in pan, loosen edges and put on wire rack to cool completely. Sift some confectioners sugar on top.
