CRANBERRY CHRISTMAS SALAD 
1/2 tbsp. grated orange rind
1 med. orange, peeled and ground
2 c. fresh cranberries, ground
2 tart apples, unpeeled, seeded and ground
1/3 c. sugar
1/2 c. chopped pecans
1/3 c. crushed pineapple, undrained
1/3 c. seedless red grapes, halved
1 (3 oz.) pkg. raspberry flavored gelatin
1/3 c. whipping cream, whipped (Cool Whip)
Garnishes: Orange slices, fresh cranberries, mint sprig

Combine first 8 ingredients in a large bowl. Chill 1 hour. Prepare gelatin according to package directions. Chill until partially set. Fold whipped cream into gelatin; add to fruit mixture; stir gently. Spoon into a 7 cup compote. Chill thoroughly. Garnish, if desired. Yield: 8-10 servings.
