MINI-CHEESECAKES 
Line 12 muffin cups with paper baking cups. At the bottom put one vanilla wafer. Beat together 8 ounces cream cheese, 1/3 cup sugar, 1 egg, 2 teaspoons lemon juice, 1/2 teaspoon vanilla until smooth. Spoon even amounts on top of each cookie. Bake at 375 degrees for 15 minutes or until set. Top each with cherry or blueberry pie filling (cool).
