BASS CREOLE 
4 lbs. bass, cut up
4 cans stewed tomatoes
1/2 bell pepper, chopped
1 1/2 onion, chopped
1/2 tsp. tarragon leaves
2 bay leaves
1 lg. jar sliced mushrooms
1/2 stick butter
Juice from one lemon
Salt and pepper to taste

Saute bell pepper, onion and butter over medium heat until soft. Add mushrooms and simmer a couple of minutes. Add remaining ingredients except bass. Simmer 20 minutes. Add bass and cook until it falls apart (about 10 minutes). Optional add 1/2 cup cream to thicken. Serves 6.
