CHICKEN BREASTS WITH CHEESE 
6 chicken breast halves, boned
salt and pepper
1/2 c. butter, softened
1/4 lb. Mozzarella cheese
1/2 c. flour
2 eggs, beaten
1/2 c. bread crumbs
2 tbsp. parsley, chopped
1 tsp. marjoram
1/2 tsp. thyme
1/2 c. dry white wine

Pound chicken breasts to 1/8 inch thick. Salt and pepper; spread with half of butter. Cut cheese into 6 pieces; place 1 piece on each breast. Roll jelly roll fashion, tucking in ends to seal. Dip in flour, then egg; roll in bread crumbs. Place in buttered baking dish. Melt remaining butter; mix in parsley, marjoram and thyme. Pour over chicken. Cover tightly. Bake at 350 degrees for 20 minutes. Remove from oven; pour wine over chicken and return to oven 15 minutes, basting frequently.
